Puff Pastry

Ingredient

180g unsalted butter 
180g margarine
4 cups plain flour
Pinch of salt
1 1/2 cup of cold water
1 tablespoon lemon juice

 1- Place the butter and margarine in a plate .Using two knives,roughly chop the fats together ,then cover and chill.When chilled chop the combined fats into small cubes.

 2-Sift the flour and salt in a large bowl.Add the cubes of fats to the flour Using a knife cit in the fat until just coated with the flour .Combine the water and lemon juice Cut into the flour with a knife without breaking the fat Add more of the liquid if necessary 

 3- With floured fingers, gently bring together into a rough ball.Turn out onto a floured surface and form into rectangle .do not knead ,Roll the dough into a rectangle keeping the edge and the sides straight .

 4- Fold the dough into three layers by folding the bottom third up and then the top third down .Seal the edges lightly withe the rolling pin.Give a quarter turn clockwise cover and refrigerate for 15 minutes Repeat rolling , clockwise four more times  refrigerate  between every time for 15 minutes so it won't get softened chill for 30 minutes before using the dough .
