Mixed Chocolate Truffles

Ingredient


400g dark chocolate , roughly chopped
60g butter
4 tablespoons thick or pouring cream 
3 cups crushed chocolate wafer biscuits 
4-6 teaspoons dark rum
4-6 teaspoons kirsch
200g dark chocolate grated
200g white chocolate grated
1- Melt chocolate butter and cream in a small pan over low heat , stirring until chocolate has melted and mixture is smooth 

2- Add crushed wafers and stir gently to combine . Divided mixture into two bowls . Add rum to one bowl and kirsch to the other and mix each well , refrigerate for 5-10 minutes , or until mixtures are firm enough to shape

3- shape balls from each mixture , using 2 level teaspoons for each ball . Roll rum truffles in grated dark chocolate and kirsch truffles in grated white chocolate . to store place in a confectionery cases between sheets of grease proof paper in an airtight container . store in refrigerator for up to two weeks
