Paste Marinara

Ingredient




1 tablespoon oil
350g spaghetti


SAUCE

1  tablespoon oil
2 onions , very finely chopped
2 cloves garlic , crushed 
1 x 425 g can tomato puree
1 small carrot , coarsely grated 
3 tablespoons chopped celery
1 cup red wine
1 teaspoon chopped fresh basil leaves or 1/2 teaspoon dried
pinch black pepper 
1 1/2 cups mixed uncooked seafood ( eg  prawns , mussels , scallops , crabmeat )

1- To prepare sauce : heat oil in a pan . Add onions and fry gently until soft .Add garlic and fry another 1-2 minutes .Add puree , carrot , celery and claret . stir until boiling , reduce heat and simmer for 15 minutes

2- To prepare pasta : bring a large pan of water and the oil to the boil. Add spaghetti and cook for 10 -12 minutes , or until firm and tender , drain again . Place spaghetti in a warm serving dish 

3- To assemble : stir basil , pepper to taste and seafood through wine sauce . Reheat 1-2 minutes until seafood is cooked . Pour sauce over spaghetti and toss lightly .
