Bread pudding ( pudina tal- hobz )

Ingredients

800g bread 
50g margarine
100g sugar
3 eggs
50g chopped mixed peel
grated rind of an orange
2 tablespoons cocoa
a drop of vanilla essence
200g sultanas 
a pinch of nutmeg
1 teaspoon mixed spices
1 teaspoon baking powder
1 1/2 cups of milk
Method
Cut the bread into four pieces , place in a bowl , cover with water and leave to soak for an hour . Drain the water off and squeeze in a sieve until it is quite dry . Mix all the other ingredients together in a bowl , add the bread and continue to stir till all the mixture is well combined . Pour the mixture into a pre-greased baking dish . Bake in a moderate oven for approximately 40 minutes or check by inserting a skewer in the center , if the pudding is cooked , this should come out clean . The pudding may be eaten warm or cold
