Ingredient
600ml boiling water
rind of 2 oranges
rind of 2 lemons
4 tablespoons gelatin
4 cups sugar
1/2 cup orange juice
4 table spoon rose water
red food coloring
1 1/2 cup icing sugar , sifted
1- Rinse a 20cm square cake tin with water ; line base with baking paper . place half the water and the rind in a medium pan . bring to boil , reduce the heat and simmer for 10 minutes
2- Combine gelatin and remaining water in a small bowl . stir with a fork until gelatin has completely dissolved
3- Add sugar , gelatin mixture , juice and rosewater to the pan . reduce heat and stir until sugar dissolves . bring to boil , then boil on low heat for 10 minutes . remove from heat . add a few drops of food coloring . mix well
4- Strain mixture into wet tin . Allow to cool and set overnight at room temperature . Dust icing sugar over a piece of grease proof paper . turn out Turkish delight into 72 pieces using a flat-bladed knife dipped into icing sugar . dust cut pieces with more icing sugar . Store in an airtight container in the refrigerator for up to one month
