Roasted Spiced Spatchcock

ingredients

1 medium sized spatchcock
3 tablespoon honey 
1 tablespoon rose water
2 teaspoon grounded cardamon
1 tablespoon lemon juice
2 tablespoon oil
1 teaspoon salt 
good pinch cayenne
1/2 cup blanched almonds
coriander sprigs for garnish


1- Pat spatchcock dry with absorbent paper , Combine all other ingredients except almonds and coriander in a bowl.

2- Line a baking dish with a piece of foil large enough to wrap around the bird. Place the spatchcock on foil and pour a little honey mixture inside the cavity .pour the remainder over the bird and sprinkle the almonds pressing them on.

3- Bring the foil up around the chicken and seal .Bake in oven for one hour ,Unwrap foil and spoon cooking juice over the chicken.

4- complete roasting the bird until rroasted from all sides ,they should be golden brown .
