Caponata ( kapunata )

Ingredient


2 large aubergines
4 large tomatoes
1 large onion
3 cloves garlic
3 tablespoons capers 
2 tablespoons sugar
1 tablespoon oregano
6 green peppers
1 tablespoon stoned olives
4 tablespoons of oil
salt and pepper

Method 
Peel and chop all vegetables . In a large saucepan heat the oil and fry all the vegetables together . Add the herbs and season . Cover and simmer gently till vegetables are tender . Add capers and olives . Stir well . Serve hot or cold
