Ingredients
1.3kg chicken jointed
2 clove garlic. finely chopped
1 tablespoon olive oil
1 onion chopped
1 1/4 cup long grain rice
6 threads saffron
3 1/4 cups chicken stock
375g green prawns peeled and deveined
2 red capsicum, seeded cut into 2.5 cm squares
1 1/2 cup frozen peas
12-16 small mussels on the shell
water or dry wine
1- In a large flame-and oven proof casserole,cook chicken pieces and garlic in oil.Remove to a plate and reserve
2- Cook onions drippings in pan until soft.Add rice until golden .Add saffron and chicken stock ,heat until boiling .Return chicken and garlic into casserole .cover
3- Bake in hot oven 190'C for 45 minutes ,Add peeled prawns ,red capsicums and frozen peas .Continue baking until rise is tender and liquids absorbed about 15 more minutes.
4- Meanwhile scrub the mussels ,place in deep pan with a splash of water or wine .cover until mussels are opened .discard unopened shells
5-To serve ,fluff rice with fork and top with mussels
